Chicken fillets – 4.0 large

Dark sesame oil – 2.0 tablespoons

Ginger – 2.0 inches

Garlic – 6.0 cloves

Soy Sauce – 1.5 tablespoons

Dark sweet soy sauce – 1.5 tablespoons

Shaoxing wine – 1.5 tablespoons

Cornflour – 1.0 heaped teaspoon

Thai basil leaves – 1.0 bunch

Cut the chicken into pieces.

Mix the soy, sesame oil, Shaoxing wine and cornflour.

Add 2 tablespoons of a neutral flavour oil to a pan. Add the garlic and ginger and cook over a low to medium heat until brown.

Turn up the heat and add the chicken, giving it a good mix in the oil and letting it cook a little.

Pour the sauce mix into the pan. Put on the lid and let it cook for 10 minutes. It might need a little water to loosen the sauce to your liking.

Add the basil right before serving.
