    Preheat the oven to 180°C. Cut the top off the garlic head, drizzle with olive oil, wrap in foil and roast for 20-30 minutes.

    Roast mixed seeds in the oven until toasty.

    Wash and dry the kale, shred it, and dress with salt, pepper, olive oil, and lemon juice. Massage the kale.

    Remove garlic from foil, mash the cloves, and mix with the kale.

    Chop scallions and add to the kale mixture.

    Prick the sweet potato with a fork and microwave for 3 minutes, turning halfway. Continue microwaving until soft.

    Slice the sweet potato, add hummus, top with kale, crumbled feta, and mixed seeds.
