Sift the flours, baking powder and salt into a large bowl.

In a separate bowl, mix together the egg, sugar, milk, melted butter and vanilla extract.

Sift the dry ingredients onto the egg mixture and fold quickly.

Fold in the apricots, pecan nuts, and cinnamon with minimal stirring.
