Chicken fillets – 4.00 pieces

rapeseed oil – 2.00 tablespoons

Butter – 25.00 grams

Onion – 1.00 medium

Garlic – 3.00 cloves

Fresh ginger – 1.00 tablespoon

Tomato puree – 1.00 tablespoon

Mild curry powder – 1.00 tablespoon

Turmeric – 0.50 teaspoon

Ground cumin – 1.00 teaspoon

Double cream – 250.00 ml

Chicken Stock – 350.00 ml

Add the oil to a pan, fry your chicken for 5-6 minutes, and set aside.

Add the butter to the pan and cook the onion, ginger, and garlic for 2-3 minutes until softened.

Add the spices and tomato puree to the pot and season with salt and pepper. Cook for two more minutes.

Add the chicken back to the pot, gradually stir in the stock and cream, and leave to simmer for 20 minutes before adding the squeeze of lemon.
