Linguine – 300.0 g

Chicken stock – 600.0 ml

Cherry tomatoes – 300.0 g

Garlic cloves – 2.0 cloves

Frozen chilli – 1.0 tsp

Frozen diced onion – 3.0 tbsp

Spinach – 2.0 handfuls

Ready cooked garlic and chilli prawns – 1.0 pack

Parmesan rind – 1.0

Lemon – 1.0

Put tomatoes, onion, garlic, chilli, spinach, and Parmesan into a large frying pan with a lid. Put the pasta on top. Pour over 500ml stock.

Simmer away for ten minutes. Cover with a lid but stir frequently. Add the remainder of the stock if needed.

When almost all the liquid is absorbed, add the prawns and lemon. Season to taste.
