Shred all the chicken meat from the carcass into bite size pieces and set to one side.

Place a larger pot over medium to high heat. With no oil in the pan, add the onion flesh side down along with the slices of ginger. Let them cook until they are charred.

Add the spices to the pot along with two litres of chicken stock, the bones from the chicken and some coriander stems. Allow the broth to cook for 30 minutes.

Meanwhile, cook your rice noodles in another saucepan and drain.

Add the sugar and fish sauce to your pot of broth and let it cook for 1-2 minutes until the sugar is dissolved. Strain the liquid into a big bowl, discard the flavourings and add the stock back to the pot.

In warm bowls, add the cooked noodles and cooked chicken. Pour the hot broth over the top and garnish with beansprouts, lime wedges, chilli, fresh coriander and a drizzle of sriracha.
