Brill or any white fish – 1.0 whole

Preheat your oven as high as it can go.

Take the fish out of the fridge to take the chill off it before cooking.

Boil the potatoes.

Place the fish skin side down on an oven proof dish. Spread the fish with softened butter, season with salt and pepper, and add garlic slices and capers.

Roast the fish in the oven for 15 minutes until it flakes apart.

Sprinkle with herbs and squeeze lemon juice over the fish.

Serve with charred courgettes dressed with olive oil, salt, lemon zest, and chilli flakes.
