Peel and very finely slice the garlic and ginger, then put into a large cold non-stick frying pan with olive oil and place on medium heat, stirring regularly.

Once golden, scoop out the garlic and ginger, leaving the oil behind. Add trimmed asparagus spears to the hot pan.

Season steaks with sea salt and black pepper, add to the pan with asparagus, and cook for 3 minutes, turning regularly.

Toss in black bean sauce and red wine vinegar for 1 minute for medium-rare steaks, or cook to your liking.

Slice the steaks, dish up, and scatter over the crispy garlic and ginger.
